Recipe for the Busy Mom – Broccoli Casserole

Large bag frozen broccoli

1 can Cream of Mushroom Soup

1 cup Shredded Cheddar Cheese

1/4 Cup Mayo

1/4 Milk

1 egg mixed

1 sleeve Ritz cracker (1 1/2 cup)

1/4 Cup Melted butter

Salt & Pepper to taste

Garlic powder



In medium pan steam broccoli partial cooked and drain.

Spray 9×13 pan with oil

Mix in large bowl: soup, 1/2 the Cheese, mayo, milk, and egg. Fold in broccoli.

Place mixture in sprayed pan and smooth even. Top with remaining cheese.

In a smaller bowl, mix crackers and melted butter. Sprinkle on top of broccoli mixture.

Bake on 350 degrees for 45 – 50 minutes.


Variations: onion powder, chicken or turkey for a one dish meal.
